Ingredients

2 pork chops, boneless (6oz. ea.)

2 eggs, beaten
- 1⁄2c Panko breadcrumbs
- 1⁄3c corn flakes, crushed

1 1⁄4t paprika
- 1⁄2t onion powder
- 1⁄2t garlic powder
- 1⁄4t chili powder

Freshly ground black pepper, to taste

Sea salt, to taste

Non-stick cooking spray, as needed

1 lb. broccoli crowns
- 2T extra-virgin olive oil
- 2t lemon zest
- 1⁄4c Parmesan cheese, grated, plus 2T extra (for breadcrumbs)
- 6qt. water
Directions
- For the broccoli, pour 6qt of water into a large pot and bring it to a boil. Blanch the broccoli in the boiling water for 3 minutes and remove. Drain well. Place the broccoli in a large bowl and add the oil, and 1t salt. Toss to coat the broccoli.
- Season the pork chops with salt. Beat the eggs in a bowl. In another bowl, combine the breadcrumbs, corn flakes, paprika, onion powder, garlic powder, chili powder, black pepper, salt, and 2T of Parmesan cheese. Dip the pork chops in the bowl with the beaten eggs. Then, dip them into the breadcrumb mixture to coat.
- Press Preset and use the left arrow to select Preset 52 for Medium Well or 53 for Well. Press START/PAUSE to begin preheating to 400°F. Once preheated, the Brio will beep twice, display “Ready”, countdown for 10 seconds and then beep once to give you time to place your food into the Brio.
Open the Base Tray and lightly spray the Air Circulation Riser with non-stick cooking spray. Place the pork chops onto the Air Circulation Riser and spray the chops with cooking spray. Close the Base Tray to begin cooking at 400°F 11 minutes for Medium Well or 13 minutes for Well.
- Halfway through cooking the Brio will emit 3 sets of triple beeps. Open the Brio Base Tray and flip the pork chops and arrange the broccoli around the pork chops.
- Close the Base Tray to resume cooking, when done the Brio will beep 3 times and display “End”.
- Toss the broccoli with lemon zest and Parmesan cheese. Enjoy with the pork chops.
