Ingredients

4 (6-ounce) salmon filets

2T lemon juice

1T olive oil

1T grated lemon zest

2t Dijon mustard

½t black pepper

1 ripe mango, peeled and diced

2 green onions, finely chopped

¼c red bell pepper, chopped

2T fresh cilantro, chopped

2T lime juice
Salsa Ingredients:
Directions
In a small bowl, whisk together lemon juice, olive oil, lemon zest, mustard and pepper.
Place the fish in a baking dish and pour the marinade over the fish.
Marinate and refrigerate for 20 minutes.
While the fish is marinated, mix all the ingredients together in a small bowl; refrigerate until it is ready to serve.
Place the salmon on 3-inch rack and cook at 350ºF for 5-6 minutes per side.
Pour the mango salsa over the salmon and serve.
Recipe Note
Tip:
- For frozen salmon, cook for 7-9 minutes per side.
- For well-done salmon, add 2 minutes to cooking time.
