Ingredients
- 4 chicken breasts, bone-in
- 2 t sea salt
- 1 t black pepper

½ t cumin

½ c butter
- Juice of lemon
- 1 c chicken stock
- 1 (12-oz) can green olives, halved
- 1 red onion, thin sliced
Directions
- Season chicken with salt, pepper, and cumin. Set pressure cooker to "sear", add butter, and press "start/stop". When melted, add chicken and cook, about 3 minutes per side. Add lemon juice, chicken stock, green olives, and red onions, and bring to a simmer.
- Close and lock lid, set pressure cooker to "poultry", adjust time to 10 minutes, then press "start/stop". When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and check seasoning. Add salt and pepper, if needed and serve.
