Ingredients
- 2 T extra-virgin olive oil

1-½ lbs pork shoulder, boneless, 1-inch cubes
- 2 T Dijon mustard

1-½ c onion, small dice
- 1 T garlic, minced
- 2 bay leaves
- 1 c tomato juice
- 1 c red wine

½ t cayenne pepper
-
½ t oregano, dried
-
¼ t ground nutmeg
- *cooked rice or orzo
- Sea salt
- Fresh ground black pepper
Directions
- In a large bowl, add pork, sea salt, fresh ground black pepper and Dijon mustard. Generously toss to coat.
- Set pressure cooker to "sear", press "start/stop", and add oil. When oil is hot, add pork. Sear meat in batches and set aside. Add onion, garlic, and bay leaf. When onion is golden brown, add tomato juice, red wine, cayenne pepper, oregano, nutmeg, and pork.
- Close and lock lid. Set pressure cooker to "meat/stew" and adjust time to 45 minutes. Press "start/stop".
- When done, do a quick release and make sure all pressure is released before opening the lid.
- Carefully open the lid and check for seasoning. Add salt and pepper if needed.
- Serve with rice or orzo.
