Ingredients
- 2c black-eyed peas
- 2c long-grain rice
- 1 small onion, finely diced
- 1 red bell pepper, diced
- 8oz smoked bacon, diced, fat rendered
- 1T Cajun seasoning
- 4c water (for the beans)
- 2c water (to cook rice)
Directions
- Place long-grain rice and 2c water in pressure cooker.
- Close lid and lock. Set to "rice" for 10 minutes.
- When done, quick release until all pressure is released.
- Open and remove cooked rice.
- Set to "sear" and add smoked bacon, cooking until crispy.
- Remove bacon and leave in the fat.
- To the fat, add all vegetables and sweat them
- do not brown.
- Add black-eyed peas, cover with water, and add Cajun seasoning.
- Close lid and lock. Set to "beans" and adjust for 30 minutes.
- When done, quick release until all pressure is released.
- Open and check to see if peas and vegetables are cooked. If not, close lid and set for an additional 15 minutes.
- When done, serve over prepared rice.
