Ingredients
- 1 T extra-virgin olive oil

½ red onion, small dice
- 1 bell pepper, small dice
- 1 c quinoa, rinsed, uncooked
- 1 c salsa

½ t sea salt
- 1 t cumin
- 1 c water

½ c black beans, rinsed, drained
Directions
Set to "sear" and add oil. When hot, add onions and peppers. Sauté for about 5 minutes.
- Add quinoa, salsa, seasonings, water, and beans.
- Close lid and lock. Set to "rice".
- When done, natural release.
- Open. Fluff quinoa with fork. Serve in bowls and enjoy.
