Ingredients
- 2 roasted sweet potatoes, quartered
- 1 C coconut milk

½ orange, peeled
- 2 T maple syrup
- 1 T ginger, minced
- 1 t vanilla extract
- Pinch of salt
Directions
- Add all ingredients to jar.
- Using the plunger lid, set to speed 8 and blend for 2 minutes.
- Once finished, open the lid and scrape out pudding into a container.
- Serve warm or let chill in the fridge for 3 hours.
