Ingredients
- 1 cup flour
- 2½ teaspoons baking powder
- Salt and pepper to taste
- 1 cup cold water
- 6 cups oil
- 5 shrimp
- 3 mini red peppers
- 1 eggplant, sliced
- 4 mini carrots
- 4 cauliflower florets
- 4 broccoli florets
Directions
- Mix flour, baking powder, salt and pepper together in bowl.
- Add cold water and whisk until smooth, set aside.
- Add oil to 3.5-quart pot and heat on Medium-High (375°F) for 5 minutes.
- Skewer shrimp and vegetables on fondue forks and coat in prepared batter.
- Place shrimp and vegetables in hot oil, with fondue forks sticking out, and cook for 4-5 minutes.
- Garnish with salt and enjoy.
