Ingredients
- 1 lb shrimp, tail-on
- 1 c white rice
- 4 T butter
- 2 cloves garlic, minced

1-½ c chicken stock
- 1 t paprika
- Pinch of salt and pepper
- 1 pinch of saffron

⅓ T chili flakes
- 2 scallions, sliced
Directions
- Set pressure cooker to "sear". Add butter and garlic and brown. Add salt, pepper, paprika, chili flakes, and saffron. Add shrimp and cook for 2 minutes. Add rice and chicken stock
- Close and lock the lid and set to "fish" and adjust for 5 minutes.
- When done, quick release and make sure all pressure is released before opening lid and stir. Garnish with scallion. Serve and enjoy.
