Ingredients
- ½ c butter, unsalted, melted
- ¾ c old-fashioned oats
- ½ c sugar, granulated
- pinch of ground nutmeg
- ½ c light brown sugar
- ¼ t cinnamon, ground packed
- Pinch sea salt
- 2 t vanilla extract
- 1 c jam (flavor of choice)
- 1 c all-purpose flour
Directions
Preheat the oven to 350°F. Line an 8x8-inch baking pan with foil and spray the bottom and sides with cooking spray; set aside.
In the bowl of a stand mixer affixed with the paddle attachment, add butter, sugar, and brown sugar. Mix on medium-high speed until light and fluffy. Scrape down the sides of the bowl as needed. Add vanilla extract and mix until incorporated.
On low speed, add flour, oats, nutmeg, cinnamon and salt. Mix until just incorporated.
Pour dough out into the prepared pan, reserving approximately ½c of dough to sprinkle on top of the jam layer. Press the dough down evenly into the pan. Spread jam in an even layer over the dough. Sprinkle chunks of the reserved batter over the top of the jam layer.
Bake for 25-30 minutes. Let bars set in the pan until completely cooled. Cut into desired sized squares.
