Ingredients
- 1 T extra-virgin olive oil

¼ c onion, small dice

¼ c carrots, small dice
- 1 clove garlic, minced

1 ½ c brown rice
- 2 t curry powder
- 2 c chicken stock
- 1 c peas
- Sea salt
- Black pepper
Directions
Set pressure cooker to "sear and add oil. When oil is hot, add onion and sauté for 2 minutes, then add carrots, garlic, and rice. Sauté for an additional 1 minute.
- Add curry powder and stock. Close and lock lid, set cooker to "rice", and adjust time to 10 minutes. Press start/stop.
- When done, allow cooker to naturally release its pressure, then do a quick release and make sure all pressure is released before opening lid.
- Carefully open lid and fluff rice, add peas, and season with salt and pepper.
- Serve and enjoy.
