Ingredients
- 4 leeks, rinsed, medium dice
- 6 cloves garlic, whole
- 2-inch piece fresh ginger, peeled, sliced thin

1 red jalapeño pepper, seeded, thin sliced
- 3 T all-purpose flour
- 2-lb beef chuck, trimmed

¼ c hoisin sauce
-
¼ c Shaoxing rice wine
- 3 T soy sauce
- 2 T light brown sugar

½ c water, room temperature
- 4 baby bok choy, cut crosswise, 2-inch pieces
- 2 c cooked white rice
Directions
In a mixing bowl, add leeks, garlic, ginger, and jalapeños. Sprinkle with flour and toss to coat then add to pressure cooker. Add beef.
- In another mixing bowl, add hoisin sauce, rice wine, soy sauce, brown sugar, and warm water. Whisk well. Pour over vegetables and beef.
- Close and lock lid, set pressure cooker to "meat/stew", adjust time to 35 minutes, press "start/stop".
- When done, quick release and make sure all pressure is released before opening lid.
- Carefully open lid and add bok choy. Close and lock lid, set pressure cooker to "steam/veggies", adjust time to 4 minutes, and press "start/stop".
- When done, quick release and make sure all pressure is released before opening lid.
- Carefully open lid and serve with cooked white rice.
