Ingredients
- 2 chicken breasts, boneless
- 2 slice ham, divided
- 2 slice Swiss cheese, divided
-
2 garlic cloves, minced, divided
-
1 egg, beaten
- 1⁄2c breadcrumbs
- 1T dried tarragon
- 1T dried thyme
-
1t parsley, finely chopped
-
Sea salt, to taste
-
Freshly ground black pepper, to taste
-
Non-stick cooking spray, as needed
Directions
- Place the chicken breasts flat on a cutting board. With a sharp knife, slice each chicken breast from the side, cutting about 3⁄4 the way through. Open up the chicken, exposing the inside of each breast.
- Season all sides of the chicken with salt and black pepper. Divide the minced garlic between the 2 breasts and place it in the center of each. Lay a 1 slice of ham in the middle of each breast and top that with a 1 slice of Swiss cheese. Close up the chicken. Repeat for the other chicken breast.
- In a large bowl, combine the breadcrumbs, thyme, tarragon, and parsley.
- Dip the chicken into the egg and then dip it into the breadcrumbs.
- Press Preset and use the left arrow to select Preset 34. Press START/PAUSE to begin preheating to 350 ̊F. Once preheated, the Brio will beep twice, display “Ready”, countdown for 10 seconds and then beep once to give you time to place your food into the Brio. Place the chicken breasts onto the Air Circulation Riser, presentation side down, and spray with non-stick cooking spray.
- Close the Brio Base Tray to begin cooking at 350 ̊F for 20 minutes.
- After ten minutes the Brio will emit 3 sets of triple beeps. Open the Brio Base Tray and flip the chicken. Spray the breasts with non-stick cooking spray for crispier chicken. Close the Brio Base Tray to resume cooking.
- When the cooking is complete the Brio will beep 3 times and display “End”.
- Remove the chicken breasts from the Brio and let it rest for 5 minutes.
