Ingredients
- 8 slices bacon, small dice
- 1 yellow onion, small dice
- 2 cloves garlic, minced
- 1 lb pinto beans, dry
- 5 c beef stock
- 2 Roma tomatoes, small dice

2 jalapeño peppers, small dice

¼ c cilantro, rough chop
- 1 t cumin
- 1 t cayenne pepper
- 1 t paprika
- 1 t oregano
- Sea salt
- Black pepper
- Parsley, rough chop (garnish)
Directions
Set pressure cooker to "sear", adjust time to 10 minutes, and press "start/stop". Add bacon and cook until crispy. Add onion and garlic and sauté until onions are translucent. Add remaining ingredients and close and lock lid. Set pressure cooker to "beans" and press "start/stop".
- When done, natural release for 30 minutes, then do a quick release and make sure all pressure is released before opening lid. Carefully open lid and stir. Check seasoning and add salt and pepper, if needed. Ladle into serving dish and top with parsley.
