Ingredients
- 1 T extra-virgin olive oil
- 1 onion, thin slice
- 1 clove garlic, minced
- 1 T fresh ginger, minced

1-½ c carrot, peeled, grated
- 2 c basmati rice

½ t cayenne pepper
- 4 c vegetable stock

½ c roasted peanuts, ground
- Sea salt
- Black pepper, cracked

¼ c cilantro, rough chop
Directions
- Set pressure cooker to "sear" and add oil. Press stop/start. When hot, add onions, garlic, ginger, and carrots. Once fragrant, add rice, cayenne pepper, and vegetable stock.
- Close and lock lid, set pressure cooker to "rice", and adjust for 10 minutes.
- When done, quick release and make sure all pressure is released before opening lid.
- Carefully open lid and fluff rice with fork. Add salt and pepper, if needed.
- Stir in peanuts and cilantro. Serve warm.
