Ingredients
- 2 lbs beef roast, 1-inch cubed
- 3 T flour
- 2 T extra-virgin olive oil
- 1 yellow onion, small dice
- 2 cloves garlic, minced
- 1 poblano pepper, small dice
- 2 chipotle peppers from adobo sauce, small dice
- 1 t oregano, dried
- 1 t cumin, ground
- 1 t smoked paprika, ground
- 1 bay leaf
- 1 (12-oz) bottle beer
- Sea salt
- Black pepper
- Corn tortillas (for serving)
- Avocado/guac (for serving)
- Pico (for serving)
Directions
- Toss beef in flour and set aside.
Set pressure cooker to "sear" and add oil. When oil is hot, add beef and brown on all sides. Add onions, garlic, and poblano pepper. Sauté until onions are soft. Add chipotle peppers, oregano, cumin, smoked paprika, bay leaf, and beer. Stir well.
- Close and lock lid, set pressure cooker to "meat/stew", and press "start/stop". When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and stir. Check seasoning and add salt and pepper, if needed. Serve with tortillas, guacamole, and pico.
