Ingredients
- 3lbs boneless beef chuck roast, trimmed
- 2T vegetable oil
- Freshly ground black pepper
- Pinch seasoned salt, to taste
- Pinch onion powder, to taste

14½oz beef broth

1½T Worcestershire sauce
- 1 large onion, cut into 4 wedges
- 4 carrots, peeled, cut into bite-sized pieces
- 4 large potatoes, peeled, cut into bite-sized pieces
Directions
- Set to "sear" and add oil.
- Add beef and brown the roast on all sides. Season with fresh ground pepper, seasoned salt, and onion powder.
- Pour in beef broth and Worcestershire sauce, and add quartered onions.
- Close lid and lock. Set to "meat/stew" and adjust for 30 minutes.
- When done, quick release until all pressure is released.
- Open and add carrots and potatoes.
- Close lid and lock. Set for an additional 15 minutes.
- When done, quick release until all pressure is released.
- Open. Remove roast and vegetables to serving dish.
