Ingredients
- 3 lbs beef chuck, 1-inch cubes
- Sea salt
- Black pepper
- 5 T extra-virgin olive oil
- 1 onion, large diced
- 4 cloves of garlic, minced
- 1 t oregano, dried

½ t cayenne pepper
- 1 t chipotle powder
- 1 t cumin
- 2 t paprika
- 2 T ancho chili powder
- 1 (12-oz) can tomatoes with chilies
- 1 (14.5-oz) can black beans

1-¼ c water
- Sea salt
- Black pepper
- Cheddar cheese, shredded (garnish)
- Sour cream (garnish)
- Yellow onion, small dice (garnish)
Directions
In a mixing bowl, add beef and season with sea salt and pepper. Set pressure cooker to "sear", add oil, and adjust time to 10 minutes. Press "start/stop". When hot, add beef, onions, and garlic and sauté until onions are translucent.
- Add oregano, cayenne pepper, chipotle, cumin, paprika, and ancho chili. Mix well and continue adding tomatoes, beans, and water.
- Close and lock lid, set pressure cooker to "meat/stew", adjust time to 15 minutes, and press "start/stop".
- When done, quick release and make sure pressure is released before opening lid.
- Carefully open lid and check seasoning. Add salt and pepper, if needed. Ladle into serving bowls and garnish with cheese, sour cream, and onions.
