Ingredients
- 1 c shortbread cookies, crushed
- 4 T butter, melted
- 1 can dulce de leche
- 16 oz cream cheese
- 2 eggs
- 1 egg yolk
- 3 T flour

Directions
- In a bowl, mix cookies with butter to make the crust.
- Press the mixture into the springform pan.
- In a mixer, add cream cheese and mix until creamy.
- Add one egg at a time.
- While mixing slowly, add in the flour then the dulce de leche.
- Pour this mixture into the springform pan and cover with foil.
- Place a steamer rack into the cooker with 1c of water.
- Place the pan into the rack and close and lock the lid.
- Set to "bake" for 35 minutes.
- After cooking, let the cheesecake sit for 5 minutes, then perform a quick pressure release and make sure all pressure is released before opening the lid.
- Open. Carefully remove cheesecake from the cooker and let cool for 10 minutes. Serve and enjoy.
