Ingredients

½lb chicken livers, chopped
- 3oz bacon, chopped
- 5oz long-grain rice
- 2c vegetable stock
- 1 large onion, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 sprig parsley, chopped

½t paprika

½t oregano
-
½t thyme

½t salt

¼t cayenne pepper

¼t freshly ground black pepper
- 1T olive oil
Directions
- Set to "sear" and add olive oil.
When oil is hot, add onions and sauté until almost soft, about 3 minutes.
Add celery and bacon and sauté for an additional 3 minutes, stirring occasionally.
- Add all spices, garlic, chicken livers, and rice. Mix well.
- Add the stock, using it to help scrape up the bits stuck to bottom of cooker.
- Close lid and lock. Set to "rice" and adjust for 4 minutes.
- When done, natural release for 35 minutes. Afterward, quick release until all pressure is released. Open. Fluff rice with a fork and garnish with parsley. Serve.
