Ingredients
- 1 T extra-virgin olive oil
- 1 yellow onion, small dice
- 1 lb beef, ground
- 2 cloves garlic, minced
- 1 T oregano, fresh, minced
- 3 T parsley, fresh, minced
- 10 oz artichoke hearts, halved

½ avocado, mashed

½ c mayonnaise

⅓ c beef stock
- 1 T apple cider vinegar
- Sea salt
- Black pepper
- ground Cooked egg noodles (for serving)
Directions
- Set pressure cooker to "sear" and add oil. When oil is hot, add onion and ground beef to brown. Once browned, add garlic, oregano, parsley, and artichokes.
- While beef is browning, add avocado and mayo to a small mixing bowl. Mix avocado and mayo until well combined then add to pressure cooker. Stir to coat with avocado mayo. Add beef stock and vinegar. Close and lock lid, set pressure cooker to "meat/stew", and adjust time to 6 minutes.
- When done, quick release to make sure all pressure is released before opening lid. Carefully open lid and check seasoning. Add salt and pepper, if needed. Ladle over egg noodles and serve.
