Ingredients
- 1 box lemon cake mix
- 2 eggs

⅓ c vegetable oil
- Zest of 1 lemon
- Juice of 1 lemon

⅓ c powdered sugar
Directions
- Mix eggs, oil, lemon zest, lemon juice, and cake mix in a large mixing bowl. Refrigerate dough for at least 30 minutes.
- Roll dough balls 1T in size into powdered sugar. Coat well and place on a baking pan lined with parchment paper. Or, use Silicone Baking Pan. Bake for 7-9 minutes at 375°F.
- Allow cookies to cool before serving.
